If you’re anything like me and love trying out new exotic foods this recipe is for you!
This recipe is a twist of the classic chia pudding incorporating dragon fruit!
– 3/4 cup unsweetened nut milk
– 1/4 cup chia seeds
– half of a dragonfruit
– 1 tsp stevia
– 1 tsp vanilla extract
Cut dragonfruit in half lengthwise. Scoop out the middle and put in a blender with nut milk, stevia and vanilla extract. Blend until smooth.
Put chia seeds in the bottom of a bowl and add liquid mixture from blender on top. Mix well. Let sit at least 10 minutes before mixing again. Top with strawberries and serve.
For presentation: Spoon out pudding and place in the skin of the dragonfruit. Top with strawberries and serve.
Tip: make this at night and let it sit in the fridge over night to take for lunch!
