I almost wasn’t going to put this recipe up. It was just something quick I threw together one day, but then I kept making it and won my sister over with it so I guess I should probably share!
Two pieces of sesame Ezekiel bread
(Or your choice of bread)
1 tsp coconut oil
1/2 tsp garlic powder
1/2 tsp onion powder
Cashew Cream Cheese
1 cup raw cashews
2 tbsp nutritional yeast
1/4 cup lemon juice
1/2 tbsp coconut oil
1/4 tsp salt
1 tsp apple cider vinegar
1-2 tbsp water
1/2 an avocado
1/2 tbsp hot sauce
Cucumber or Watermelon Radish
1. Spread about a half a teaspoon of coconut oil on one side of each piece of bread. Sprinkle with garlic and onion powder. Toast.
2. Combine all cream cheese ingredients in a food processor and blend until thick and creamy (like a cream cheese spread). Tip: You may need mix in between blending and add more water.
3. Mash up the avocado and add hot sauce.
4. Spread the cream cheese on one side of the toast and avocado spread on the other side. Place toppings on top of each side, then put together like a sandwich and enjoy!
